Using GPO to disable Copilot does not remove it from Office apps. To remove it from Office apps:
Disable using Copilot (do this once)
File -> Account
...
Only that turning connected experiences off also disables onedrive integration and certain extensions. I tried this a while ago and after a couple days had to turn it back on.
But disabling copilot in “authoring and proofing tools” works.
