In short: Dim = simple & polished, Jellyfin = powerful & feature-rich.
This makes it sound like Jellyfin is everything Dim is plus a bunch of features, unless there’s something specific about “polish” here. I haven’t tried it so I don’t know - what do you mean by polish in this case, can you give an example?
